I use Cool Edit Pro and Audacity.

Cool Edit Pro is basically a studio, but on your computer. It has many effects and features, such as compression, parametric equalisation, multi-track recording, mono and stereo recording.. and lots more.

Audacity is basically the beginners guide to audio recording. It has some good features but in my opinion, is for the little projects like speech recording or music recording that doesnt need much editing.
